First, vigorously shake the can of coconut milk to mix the contents inside.
Then, add chopped mango, coconut milk, coconut yogurt, maple syrup, vanilla extract, salt, and cardamom to a blender. Blend until smooth and creamy.
Next, pour the mixture into each popsicle mold, filling ¾ full. Tap the popsicle molds against the countertop to remove any air bubbles. Carefully cover and insert a popsicle stick into each mold.
After, freeze the popsicles for 4 hours or until firm. Finally, gently remove popsicles and enjoy!

Can I use frozen mango?
Yes, you can use frozen mango if that is all you have available. However, you need to let it thaw completely before creating the recipe. Keep in mind the flavor will be sweetest if you use ripe fresh mango.
Can I make them sugar-free?
While this recipe is already made with no refined sugar, it does contain a dash of maple syrup. If you would like to make it entirely sugar-free, you can omit the sweetener entirely.

In order to remove popsicles from the mold, let them thaw for 5-10 minutes first. Then, gently wiggle the popsicles while you pull them out of the mold.
Alternatively, you can run the bottom of the popsicle mold under warm running water for 20-30 seconds to loosen them.

- 1 can full-fat classic coconut milk
- 1/2 cup unsweetened coconut yogurt
- 3 tbsp maple syrup, agave, or honey
- 1 tsp vanilla extract
- 1/2 tsp salt
- 1/4 tsp ground cardamom

- Vigorously shake the can of coconut milk to mix the contents inside. If the cream and liquid is still separated, whisk them together until smooth.
- In a blender, add chopped mango, coconut milk, coconut yogurt, maple syrup, vanilla extract, salt, and cardamom. Blend until smooth and creamy.
- Pour the mixture into each popsicle mold, filling ¾ full. Tap the popsicle molds against the countertop to remove any air bubbles. Carefully cover and insert a popsicle stick into each mold.

- *If you are not using fresh, ripe, juicy mango, you may need to add more liquid to the recipe. To fix this, simply add 1/2 to 1 cup water to thin the mixture and blend again.
