Cookies and cream rice krispie treats are an easy no-bake dessert recipe! They are crispy, sticky, sweet, and packed with crunchy Oreo cookies. Plus, they’re topped with a drizzle of white chocolate! These cereal dessert bars are also vegan, dairy-free, and gluten-free friendly.
In case you haven’t noticed, I’ve been having so much fun creating homemade rice krispie treats this year! I’ve already shared Vanilla Rice Krispie Treats, Birthday Cake Rice Krispie Treats, and Chocolate Rice Krispie Treats. There are dozens more to come, but today we’ll focus on the cookies and cream variety.
These Oreo Rice Krispie Treats are as sweet, sticky, crispy, and gooey as all of the other fun flavors. However, they’re made even better with chocolate sandwich cookies mixed in and white chocolate drizzled on top! This creates a soft-yet-crunchy texture, which is simply hard to resist.
Per usual, this cereal dessert recipe is super quick and easy to make. It’s a no-bake treat, which means you’ll need no oven and no fancy equipment. It’s made in just one pot on the stovetop, and it takes about 10 minutes. The hardest part is waiting for the treats to cool down and set… you’ll want to dig in right away!

What are vegan Oreo rice krispie treats made of?
- Rice Krispies cereal: You can use the original Kellogg’s Rice Krispies cereal or select a healthier option, like organic brown rice crisps. If you need to make them gluten-free, see the FAQ section below for brand recommendations.
- Marshmallows: Fresh marshmallows that have a soft, pillowy texture will create the freshest treats. Make sure you’re not using an old, stale bag of marshmallows. Also, if you are vegan, choose a gelatin-free brand (like Dandies or Trader Joe’s).
- Oreos: Use classic Oreo cookies or any other type of chocolate sandwich cookies. I recommend the Back to Nature or Newman’s Own brands, which are linked in the FAQ section below.
- Butter or vegan butter: If you are vegan, I highly suggest the Earth Balance brand. Otherwise, you can use regular butter.
- White chocolate chips: White chocolate adds flavor and enhances the appearance. Make sure you’re using dairy-free white chocolate if you want them to be vegan.
- Vanilla extract: The rich vanilla flavor comes from a teaspoon of pure vanilla extract.
- Almond extract: This extract elevates the overall flavor, making the treats even sweeter.
- Salt: Salt balances the sweet ingredients.

First, line a 9×9-inch square baking dish with parchment paper, leaving some of the paper hanging over the edges. Lightly spray with oil.
Tips for making the best vegan rice krispie treats with oreos
Use fresh marshmallows. You will get the best results if you use marshmallows that have a soft, pillowy texture. Stale marshmallows do not melt as easily, and they’ll cause your rice krispie treats to become harder and crunchier.
Melt the marshmallows slowly. Don’t burn the sugar! If you overcook the marshmallows and burn the sugar, your cereal bars will become too crunchy. Instead, be patient and let them slowly melt together.
Vegan marshmallows do not melt easily. Since vegan marshmallows are gelatin-free, they don’t melt as thoroughly as regular marshmallows. It’s totally OK if there are still a couple unmelted chunks that won’t fully combine.
Crush the Oreos into bits and pieces. The crushed Oreos should be broken into small bits and pieces (like the size of blueberries). Don’t leave them too large because the mixture won’t stick together well. On the other hand, don’t crush them into a powder because you’ll lose out on the crunchy texture and flavor contrast.
How to prevent rice krispie treats from sticking to the pan: You must use parchment paper and lightly spray it with oil before making the bars. This will make your life so much easier! You’ll be able to effortlessly remove the bars from the pan.

No, since it contains malt flavoring, Kellogg’s Rice Krispies cereal is not gluten-free. Malt is derived from barley, which is a grain that contains gluten.

Yes! The original Oreo cookies are indeed vegan friendly. However, there are many other brands that make dairy-free chocolate sandwich cookies with better ingredients (and an even better flavor!). I love the Back to Nature and Newman’s Own brands.
Regular marshmallows contain gelatin, an animal byproduct, so they are not vegan. If you want to make this recipe vegan-friendly, use the Dandies or Trader Joe’s brand.

Ingredients
- 1/2 cup butter or vegan butter
- 12 oz marshmallows or vegan marshmallows
- 1 tsp vanilla extract
- 1/2 tsp almond extract
- 1/8 tsp salt
- 5 cups rice krispies cereal (or brown rice crisps)
- 1 cup crushed Oreo cookies (~10 cookies)
- 1 cup white chocolate chips, for topping
Instructions
- Line a 9×9-inch square baking dish with parchment paper, leaving some of the paper hanging over the edges. Lightly spray with oil.
- In a large pot, melt the butter over medium-low heat. Add marshmallows. Stir together just until the marshmallows are melted through. It is important to slowly melt them; do not overcook the marshmallows or the rice krispies treats will become hard.
- Once the marshmallows are melted, immediately remove the pot from heat. Stir in the vanilla extract, almond extract, and salt. Mix together to evenly combine.
- Add rice krispies cereal to the pot. Gently fold together, evenly coating all of the cereal. Add crushed Oreos and stir together until combined.
- Transfer the mixture to the baking dish. Using a silicone spatula, press it across the dish in an even layer.
- In a small bowl, add white chocolate chips. Microwave in 30-second intervals, stirring in between, until melted through. Drizzle (or spread) on top of the rice krispie treats.
- Set aside to cool for one hour. If you’d like to speed up the process, you can chill them in the refrigerator. After, slice into 12 or 16 squares. Enjoy!
