What ingredients are in raw brownie bliss balls
Ready for a super easy dessert? These healthy brownie energy balls require just 7 ingredients:
- Walnuts: Walnuts are a great source of several nutrients, including iron, magnesium, copper, phosphorus, and vitamin B6.
- Almonds: Almonds are rich in healthy fats, antioxidants, vitamin E, manganese, and magnesium.
- Medjool dates: Instead of butter and sugar, these no bake brownie bites gain their fudgy texture and sweet flavor from medjool dates.
- Cacao powder: Both cacao powder and cocoa powder can be used in this recipe. However, cacao powder is higher in magnesium, iron, protein, and fiber.
- Chocolate chips: I recommend using vegan mini chocolate chips, but regular chocolate chips work just as well. Semi-sweet is preferable over dark chocolate.
- Vanilla: Don’t skip out on the vanilla! Use a high-quality vanilla extract or vanilla bean paste. For vanilla bean paste, however, reduce the amount by half.
- Salt: A pinch of salt balances the rich, nutty, and sweet flavors of all other ingredients.

The recipe begins by combining nuts, dates, cacao powder, vanilla, and salt in a food processor. After just a couple minutes of processing, the ingredients will combine to create a sticky dough.
The fudgy brownie dough is then transferred to a bowl and combined with mini chocolate chips. Finally, the dough is rolled into bite-sized balls. It’s that simple!
Tips to perfect this no bake brownie bites recipe
Add water, if needed. The fudgy brownie dough is created by combining nuts, dates, and cacao in a food processor. While processing, the ingredients should crumble and, eventually, form into a sticky dough. If your medjool dates are on the drier/harder side, you may have a difficult time achieving a sticky texture (it will be crumbly instead). If this issue arises, no worries! Simply add 1-2 tbsp water and process the ingredients again. The additional moisture will help bind the ingredients together and the dough will become sticky.
Don’t forget to remove the pits from your medjool dates. Medjool dates have a pit inside. Be sure you remove them before adding the ingredients to a food processor.
How to substitute dates? Unfortunately, there is nothing quite like medjool dates in no bake dessert recipes. They provide the perfect texture and a deliciously sweet flavor. However, if it is very tough to find dates in your area, you can try replacing them with dried figs, raisins, dried cherries, or dried cranberries. This will significantly change the flavor of the dessert, but it’s the next best substitution.
Store the brownie bites in an airtight container. For a soft and fudgy texture, keep them at room temperature. For a chewy texture, store them in the refrigerator. Alternatively, you can place them in the freezer where they will last for 1 month.

Ingredients
- 1 cup raw walnuts
- 1/2 cup raw almonds
- 12 medjool dates, pitted
- 1/3 cup cacao powder
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1/4 cup mini chocolate chips
- 1–2 tbsp water, as needed
Instructions
- Add walnuts, almonds, medjool dates, cacao powder, vanilla extract, and salt to a food processor. Process the ingredients until a sticky dough forms. If your dough is crumbly rather than sticky, add 1-2 tbsp water and process again. The additional moisture will help the ingredients stick together.
- Transfer the fudgy brownie dough to a bowl. Add chocolate chips. Use a rubber spatula, spoon, or clean hands to mix in the chocolate chips.
- Line a plate with parchment paper. Scoop the brownie dough into 1-inch rounds. Use clean hands to roll them into balls. Enjoy!
Notes
- If you cannot find mini chocolate chips, you can use regular chocolate chips instead.
- Store these no bake brownie bites in an airtight container. Keep them at room temperature or inside the refrigerator. They will remain fresh for 1 week.

I found this doing an internet search for “easy recipe brownies with dates and cocoa powder,” and went through a few of them before seeing this one, and I immediately made a double batch. These brownie bites are delicious – even without the chocolate chips (says the someone who completely spaced on adding them)!
Unfortunately, I do not have a food processor, so I enlisted my baseline Black & Decker blender to do the pinch hitting. It was not the quickest – nor was it the easiest (or least messy) – way to make these…but I’m happy to say that it got the job done!

Hi! Do you use unsweetened or sweetened cocoa power? I have both baking cocoa powder and instant cocoa powder that’s meant for making hot cocoa, not sure which one to use.

Of course! ๐ If you don’t want to make balls, you can press the dough into a baking pan and slice them into squares. Be sure to use parchment paper so the dough does not stick to the pan. Enjoy! xo

These are SOOOOO DELICIOUS! I added a little maple syrup to sweeten it because my cacao powder is very bitter and added a few more walnuts because I didn’t have almonds. For an added touch I rolled the finished balls in powdered sugar, I guess coconut flakes would also work well. Definitely will make them again!!!

Just came across this recipe and realized in have mejdool dates which I forgot about. 30 min of reading recipe and making this. Amazing balls, super easy and quick. I used pecans instead of walnuts and added extra salt as my family loves that sea salt flavour. My kids are super happy. Will be a regular in my house now. Have you tried with extra protein powder? Thinking of tweaking next time.

How do I make them if I don’t have a food processor ๐ ?
Hi, Shagun! Do you have a high-powered blender? That should work as well. If you use a blender, you may have to open the lid and scrape the sides of the container down (pressing the dough toward the blades) in between blending. ๐
I just want to make sure Iโm reading your serving sizes correctly. So 1 ball is one serving, and 1 ball is 172 calories and 16g of sugar?
If you roll the dough into 14 balls, yes. You can roll them as small or as a large as you want. You can roll it into 28 balls for 85 calorie and 8g sugar brownie bites instead. It depends on how big you make the balls. If you are unfamiliar with date balls, they are high in sugar because they contain medjool dates. Medjool dates have a high sugar content because it’s a type of fruit. All fruit contains quite a bit of sugar. However, fruit also contains fiber which slows the absorption of sugar in the body. It’s different than consuming cane sugar.
Just made these and they are SO good. I didnโt use almonds because Iโm allergic so I just used more walnuts. Definitely satisfies my sweet tooth and love that thereโs no flour or added sugar in this recipe!
