- Vegan butter: You can use any dairy-free butter, but I recommend the Earth Balance buttery sticks.
- Chocolate chips: I love using a mixture of regular chocolate chips and mini chocolate chips. This creates a delicious variation in flavor and texture throughout the bars.
- Non-dairy milk: Use your choice of non-dairy milk, such as almond milk or oat milk.
- Cornstarch: Cornstarch enhances the overall texture. It makes the vegan blondies thicker and creates a tender, fudgy, chewy texture.
- Baking powder: This leavening agent helps the chocolate chip blondie dough rise while baking in the oven.
- Vanilla extract: A generous spoonful of vanilla extract produces a rich vanilla flavor.

First, preheat the oven to 350 degrees F. Line an 8×8-inch square baking dish with parchment paper, leaving some of the paper hanging over the edges.
Tips for making the best vegan chocolate chip blondies
Weigh the flour. To ensure you are not using too much flour, I recommend using a food scale to weigh it. This will produce the most accurate results. The recipe calls for 272g grams of flour.
Use regular and mini chocolate chips. To really bring your blondies to the next level, I recommend using a combination of regular chocolate chips and mini chocolate chips. This creates a delicious variation in taste and texture, making every bite different from the previous one.
How to make clean slices: Run a large knife under hot water for 15 seconds, then wipe dry with a paper towel. Gently slice into the bars. When the knife begins to cool down, repeat as needed.
Add flaky sea salt. If you love a sweet and salty dessert, sprinkle some flaky sea salt on top of the bars. This enhances the flavor and gives them a more professional, bakery-style appearance.

Ingredients
- 1/2 cup vegan butter, slightly softened (112g)
- 2/3 cup light brown sugar, packed (142g)
- 1/2 cup granulated sugar (96g)
- 1/4 cup non-dairy milk
- 1 tbsp vanilla extract
- 2 cups all-purpose flour (272g) (gluten-free if needed)
- 1 and 1/2 tsp cornstarch
- 1/2 tsp baking powder
- 3/4 tsp salt
- 1 cup chocolate chips
Instructions
- Preheat the oven to 350 degrees F. Line an 8×8-inch square baking dish with parchment paper, leaving some of the paper hanging over the edges.
- In a large bowl, add vegan butter, brown sugar, and sugar. Using a stand mixer or an electric handheld mixer, cream together until light and fluffy (2-3 minutes). Add non-dairy milk and vanilla extract. Cream together until combined.
- Add all-purpose flour, cornstarch, baking powder, and salt. Mix together until the flour is evenly incorporated. Add chocolate chips and stir together.
- Transfer mixture to the baking dish. Using clean hands or a rubber spatula, press the mixture against the bottom of the dish.
- Bake the blondies for 30-35 minutes, or until the edges begin to turn light golden brown. Remove from the oven and set aside to cool.
- Gently lift the parchment paper to remove the blondies from the pan. Slice into 16 bars. Enjoy!
