Ingredients

Units Scale
  • 1/2 cup vegan butter, slightly softened (112g)
  • 2/3 cup light brown sugar, packed (142g)
  • 1/2 cup granulated sugar (96g)
  • 1/4 cup non-dairy milk
  • 1 tbsp vanilla extract
  • 2 cups all-purpose flour (272g) (gluten-free if needed)
  • 1 and 1/2 tsp cornstarch
  • 1/2 tsp baking powder
  • 3/4 tsp salt
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350 degrees F. Line an 8×8-inch square baking dish with parchment paper, leaving some of the paper hanging over the edges.
  2. In a large bowl, add vegan butter, brown sugar, and sugar. Using a stand mixer or an electric handheld mixer, cream together until light and fluffy (2-3 minutes). Add non-dairy milk and vanilla extract. Cream together until combined.
  3. Add all-purpose flour, cornstarch, baking powder, and salt. Mix together until the flour is evenly incorporated. Add chocolate chips and stir together.
  4. Transfer mixture to the baking dish. Using clean hands or a rubber spatula, press the mixture against the bottom of the dish.
  5. Bake the blondies for 30-35 minutes, or until the edges begin to turn light golden brown. Remove from the oven and set aside to cool.
  6. Gently lift the parchment paper to remove the blondies from the pan. Slice into 16 bars. Enjoy!
