Everyone knows and loves the classic snickers candy bar, but did you know you can enjoy the same delicious treat in a much healthier way? These snickers stuffed dates contain everything you love about snickers bars, but they’re made guilt-free with nutrient-packed ingredients!
It all starts with sweet, sticky, caramel-like medjool dates. They are stuffed with creamy peanut butter, crunchy roasted peanuts, and covered in melted chocolate. Then, a sprinkle of flaky sea salt is added on top. It all comes together perfectly to create a sweet and salty dessert!
This chocolate covered dates recipe is entirely vegan, dairy-free, gluten-free, and made with no refined sugar. It contains just 7 ingredients including dates, peanut butter, almond flour, peanuts, chocolate chips, vanilla, and salt. From start to finish, this no-bake dessert is made in less than 20 minutes.

What are snickers dates made of?
- Medjool dates: I recommend using fresh whole dates for the best results. They will have the sweetest flavor and a sticky, gooey texture (like caramel!). Make sure you remove the pit from each date before filling them with peanut butter.
- Peanut butter: Use your favorite creamy peanut butter. If it has a drippy consistency, you’ll want to add the almond flour to thicken it up a bit. However, if your peanut butter is already quite thick, you can skip the almond flour entirely.
- Almond flour: This flour alternative is made from finely ground almonds. I love the Bob’s Red Mill brand.
- Roasted peanuts: Roasted and salted peanuts will create the best flavor. If you’d like to, you can use raw peanuts instead.
- Chocolate chips: Use dark chocolate or milk chocolate (if you aren’t dairy-free). If white chocolate is more your thing, you could use that instead.
- Vanilla extract: Add a dash of vanilla to create a sweeter flavor.
- Flaky sea salt: Sprinkle flaky sea salt on top of the snickers dates to create a sweet and salty treat. It enhances the sweet flavor of the dates and rich chocolate topping.
How to make chocolate peanut butter dates

Step 1: Create the crunchy peanut butter filling
First, add peanut butter, almond flour, and vanilla extract to a bowl. Stir together until evenly combined.
Then, add roasted peanuts to the bowl. Stir together again.
Step 2: Stuff medjool dates with peanut butter
Next, place a large piece of parchment paper onto a cutting board or plate.
Slice the medjool dates in half lengthwise, leaving the base of each date still intact. Remove the pits and discard them. Spread a spoonful of peanut butter into the center of each date. Gently press each date closed.
Step 3: Dip peanut butter stuffed dates in melted chocolate
After, add chocolate chips to a bowl. Microwave in 30-second intervals, stirring in between, until the chocolate is melted through.
Using a fork, carefully dip each peanut butter stuffed date into the melted chocolate. Tap off any excess, then transfer it to the parchment paper.
Alternatively, you can drizzle the melted chocolate over each medjool date. Either way you choose to coat the dates, sprinkle flaky sea salt on top of the melted chocolate.
Finally, chill the dates in the refrigerator until the chocolate sets. Enjoy!
Frequently asked questions (FAQ)
Yes! Follow the same recipe, but with almond butter instead. Typically, almond butter is much thicker than peanut butter. Therefore, you may want to remove the almond flour completely.
Absolutely! Use sunflower seed butter instead. You can remove the almond flour or swap it with oat flour.
No, it’s optional. If I’m using a natural peanut butter with a drippy consistency, I add almond flour to thicken it. This makes the snickers dates much cleaner and tastier (because the peanut butter filling won’t be dripping everywhere!). However, if your peanut butter is quite thick and solid, you can omit almond flour from the recipe.
Of course. If white chocolate is more your thing, feel free to swap the chocolate chips with white chocolate instead.
How to store snickers dates
Store these chocolate peanut butter dates inside a tightly sealed container or ziplock bag in the refrigerator. Enjoy within 1-2 weeks.
If you’d like to store them longterm, you can keep them inside the freezer. Consume within 3 months. Let them thaw for 10 minutes before enjoying!
