Description

Snickers dates are stuffed with peanut butter, roasted peanuts, and covered in melted chocolate! This snickers dates recipe is easy, healthy, vegan, dairy-free, and made with no added sugar. They are rich, creamy, crunchy, sweet and salty all at once. These chocolate peanut butter dates are so addictive. They taste like a healthy snickers bar!

Instructions

  1. In a bowl, add peanut butter, almond flour, and vanilla extract. Stir together until evenly combined. Add roasted peanuts, then stir together again.
  2. Place a large piece of parchment paper onto a cutting board or plate. Slice the medjool dates in half lengthwise, leaving the base of each date still intact. Remove the pits and discard them. Spread a spoonful of peanut butter into the center of each date. Gently press each date closed.
  3. In a bowl, add chocolate chips. Microwave in 30-second intervals, stirring in between, until the chocolate is melted through.
  4. Using a fork, carefully dip each peanut butter stuffed date into the melted chocolate. Tap off any excess, then transfer it to the parchment paper. Alternatively, drizzle the melted chocolate over each medjool date. Sprinkle flaky sea salt on top of the melted chocolate.
  5. Chill the dates in the refrigerator until the chocolate sets. Enjoy!

Notes

  • How to store: Store the snickers dates inside a tightly sealed container or ziplock bag in the refrigerator. Enjoy within 1-2 weeks. If you’d like to store them longterm, keep in the freezer and enjoy within 3 months.
