No-bake vegan cosmic brownies are a homemade copycat recipe for the classic Little Debbie dessert! These healthy cosmic brownies are fudgy, moist, rich, and dense. The flourless brownie layer is topped with chocolate ganache icing and candy coated rainbow chips. They are dairy-free, gluten-free, grain-free, and so easy to make!

Cosmic brownies are a classic Little Debbie bakery item. According to their website, cosmic brownies are described as a “chewy brownie topped with fudge icing and colorful candy coated chocolate pieces.”
In my opinion, though, these are far more than just a pre-packaged brownie. They were a lunchbox staple throughout my childhood! Between myself and my five siblings, a box of these did not last long in our household. Upon reflection, I probably had far too many than I should have – but, dang, were they delicious. This is quite possibly where my love of chocolate began.
These homemade cosmic brownies are a copycat recipe for the original, but enhanced with a richer flavor and healthier ingredients. You would never guess it by the decadent taste, but these no-bake brownies are secretly good for you. They are packed with nutrient-dense ingredients, like medjool dates, almond flour, walnuts, and coconut cream.
First, we’ll create the ultra fudgy, chewy brownie layer. Then, we will spread the creamy chocolate ganache icing on top. Last but not least, a sprinkle of candy coated rainbow chips complete the brownies. Everything comes together perfectly to create one out-of-this-world chocolate treat!

- Almond flour: This grain-free flour is made from finely ground almonds. It’s a healthier alternative to all-purpose flour and naturally gluten-free.
- Walnuts: Raw walnuts are a great source of omega-3 fats and antioxidants.
- Cocoa powder: Cocoa creates the rich chocolate flavor. You can also use cacao powder, which is the raw and unprocessed version of cocoa.
- Rainbow chips: Cosmic brownies are incomplete without the candy coated rainbow chips. These colorful sprinkles are supposed to represent celestial bodies in the night sky, hence the “cosmic” name!

Prepare the raw brownies
Firstly, line a 9×9 inch square dish with parchment paper, leaving some paper hanging over the edges. This will prevent the brownies from sticking to the pan and let you easily remove them later on.
Next, add the almond flour, walnuts, cocoa power, vanilla extract, and salt to a food processor. Blend the ingredients they are crumbled into a flour-like consistency. Add the pitted medjool dates. Blend again, until a sticky dough forms.
Then, transfer the brownie dough to the square dish. Firmly press it across the bottom of the dish in an even layer.
How to make vegan chocolate ganache icing
Firstly, add chocolate chips, maple syrup, and vanilla extract to a bowl. Set aside.
Next, open the can of coconut cream. Scoop all of the contents into another bowl (both the thick cream and the clear liquid underneath). Microwave for 1 minute 45 seconds, then whisk together to combine. Pour 2/3 cup over the bowl of chocolate chips, maple syrup, and vanilla extract. Sit for 1-2 minutes, then whisk together until smooth. If the chocolate chips are not fully melted, microwave for 15-30 seconds and whisk together again.
Then, pour the chocolate ganache over the brownie layer. Spread it evenly across the surface of the brownies. Tap the dish against the countertop if you need help smoothing it out. Sprinkle the candy coated rainbow chips on top.
Chill the homemade cosmic brownies
Finally, chill the cosmic brownies inside the refrigerator for 4 hours (or until the chocolate ganache icing sets).
After, gently lift the parchment paper out of the dish to remove the brownies. Slice into 16 squares. Enjoy!
Tips for making the best copycat cosmic brownies
Use soft medjool dates. Soft and sticky medjool dates work best for this recipe. If your dates are dry and hard, I recommend soaking them in hot water first. To do this, simply add the dates to a bowl of very hot water for 10 minutes. After, drain the water and pat the dates dry.
Use canned coconut cream. The chocolate ganache icing is made with canned coconut cream, not coconut milk. This is needed for a thick, creamy consistency.
Decorate with rainbow chips. In order to make authentic copycat cosmic brownies, don’t forget to add rainbow chips on top! Although they may look like regular sprinkles, they are actually miniature candy coated chocolate chips. If you can’t find any rainbow chips, you can use regular sprinkles instead.
