    These birthday cake energy balls are sweet, soft, and reminiscent of vanilla cake! It’s a no bake dessert recipe that’s vegan, gluten-free, healthy, and easy to make. Prepare these cake batter balls in just 5 minutes with oat flour, cashew butter, white chocolate chips, and rainbow sprinkles.

    Whether it’s a birthday or just a regular afternoon, these no bake birthday cake energy balls will give you a reason to celebrate! The recipe is a healthy twist on the classic cake batter flavor we all love. Each bite-sized ball is soft, chewy, and perfectly sweet. And, honestly, they put me in a good mood every time I make them. (They’re just so cute! Look at them!) Enjoy these energy balls as a healthy dessert or afternoon snack to satisfy your post-lunch cravings.

    What ingredients are in cake batter energy balls?

    • Oat flour. Oat flour is the main ingredient in these birthday cake balls. It’s rich in fiber and contains thiamin, iron, calcium, and potassium. Oat flour is a wonderful gluten-free flour substitution, making it perfect for this recipe!
    • Cashew butter. Cashew butter is the rich and creamy binding ingredient for these bliss balls. You can make my homemade cashew butter or use store bought cashew butter instead.
    • Coconut sugar. Realistically, any variety of sugar can be used. I love coconut sugar but traditional cane sugar will work, as well.
    • White chocolate chips. Get your hands on some vegan white chocolate chips for the ultimate birthday cake flavor. If you don’t have any in your pantry, you can use regular vegan chocolate chips instead. The overall flavor will be different but it’ll be delicious, nonetheless.
    • Sprinkles. Rainbow sprinkles, to be exact 🙂 If you are following a vegan diet, double check the ingredients to make sure your sprinkles are free of confectioner’s glaze.
    • Vanilla extract. These energy balls really taste like vanilla cake. Why? Because we’re using a nice dash of pure vanilla extract in the dough. Don’t omit this ingredient; it’s essential for that true cake batter flavor.
    • Almond extract. Almond extract also contributes to the cake flavor. It’s an optional ingredient, but highly recommended!
    • Salt. I use pink himalayan salt, but any salt will do.

    How to make birthday cake balls

    First, add oat flour, cashew butter, coconut sugar, vanilla extract, almond extract, and salt in a large bowl. Mix ingredients to form an evenly combined dough. Note: It’s easiest to use clean hands in order to mash/combine the ingredients together!

    Then, add in rainbow sprinkles and white chocolate chips. Mix to evenly combine. Scoop the dough into 1-inch rounds. Use clean hands to roll the dough into balls.

    Kaylie’s tips

    • You can buy oat flour or make your own at home. To create oat flour, simply add 3-5 cups rolled oats to a high-speed blender or food processor. Process until it forms into a thin, fine flour.
    • If you are following a vegan diet, make sure your white chocolate is dairy-free and your sprinkles do not contain confectioner’s glaze.
    • Different brands of cashew butter may produce varying results. I recommend using a natural cashew butter rather than a thick, no-stir kind. If your dough is looking dry, simply add 2-4 tablespoon almond milk.
    • If you are using salted cashew butter, I recommend reducing the salt to ⅛ tsp.
    • Store these birthday cake balls in an airtight container or ziplock bag. I do not recommend placing them in the refrigerator; no bake desserts containing oat flour become dry under cold temperatures. Instead, keep these in your pantry to maintain their soft and chewy texture!

    Ingredients

    • 1 tsp vanilla extract

    • ¼ tsp salt*
    • 2 tbsp rainbow sprinkles
    • 2 tbsp white chocolate chips
    • 2–4 tablespoon almond milk**

    Instructions

    • *Use less salt if your cashew butter already contains salt.
    • **Certain brands of cashew butter may produce different textures. If your dough is looking dry, add 2-4 tablespoon almond milk or water.

      Is there an alternative to adding nut butters/extract due to allergies?

        Hey, DJ! If you have a nut allergy, I recommend using sunflower seed butter or sweetened tahini. However, they will not have as much of a “cake batter” flavor as the cashew butter. Cashew butter + vanilla extract are key ingredients for achieving the birthday cake flavor!
