    Chocolate protein truffles are one of the best protein powder desserts! This quick and easy recipe is vegan, gluten-free, no-bake, and refined sugar-free. It’s made with healthy ingredients including chocolate protein powder, nut butter, cocoa powder, and maple syrup. They are best enjoyed as a pre-workout snack or post-workout dessert!

    From start to finish, you can create these chocolate protein truffles in 20 minutes or less. They’re quick, easy, and made in one bowl – no food processor or fancy equipment needed! The simple recipe contains pantry staples like protein powder, nut butter, cocoa powder, and maple syrup.

    What are vegan protein truffles made of?

    • Protein powder: Chocolate protein powder gives the truffles a rich chocolate flavor while making them high in protein. You can use any type, including plant-based or whey protein. I recommend the Complement brand for this recipe.
    • Nut butter: Use any type of creamy nut butter, like peanut, almond, or cashew butter. For a nut-free option, try sunflower seed butter instead.
    • Chocolate chips: The truffles are dipped in melted chocolate chips. You can use any type of chocolate, like dark, semisweet, milk, or sugar-free varieties.
    • Coconut oil: Although it’s optional, coconut oil helps thin the melted chocolate chips. This makes it easier to dip and coat the truffles. Additionally, it softens the chocolate coating which prevents it from coarsely breaking once bitten.
    • Maple syrup: The truffles are naturally sweetened with real maple syrup. Alternatively, you can use honey or agave nectar.
    • Cocoa powder: Cocoa creates a deep chocolate flavor. For an even healthier option, use raw cacao powder instead.
    • Vanilla extract: Vanilla adds a sweet flavor and aroma.
    • Salt: A pinch of salt enhances the other ingredients.

    How to make chocolate protein truffles

    First, add chocolate protein powder, nut butter, maple syrup, cocoa powder, vanilla extract, and salt to a bowl. Mix the ingredients together until evenly combined.

    The dough’s consistency will vary depending on the brand of protein powder and nut butter. If the dough is too dry, add a splash of maple syrup or extra dollop of nut butter to bring in more moisture. If the dough is too wet, add a spoonful of protein powder to absorb the excess moisture.

    Next, line a large plate or cutting board with parchment paper. Using clean hands, scoop and roll the dough into balls. Transfer them to the parchment paper.

    Then, in a microwave safe bowl, add chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between, until melted. Using a fork, dip one protein ball into the melted chocolate. Evenly coat the ball, then transfer it to the parchment paper. Repeat until all of the balls are coated.

    Chill the protein truffles in the refrigerator for 5-10 minutes or until the chocolate sets.

    How to store vegan protein truffles

    Store the chocolate protein truffles inside a sealed container. Keep them at room temperature for up to 3 days or inside the refrigerator for up to 1 week.

    If you would like to store them longterm, keep in the freezer for up to 3 months. Let the truffles thaw before enjoying.

    Ingredients

      I use Vanilla protein powder. Wonder if I could use a bit less protein powder and more cacao powder (I think I could substitute cacao powder instead of cocoa powder?

        Hi Kathryn! Yes, absolutely. Feel free to use vanilla protein powder and just keep the recipe as is. Since these protein balls are covered in chocolate, they will taste plenty rich without adding extra cocoa powder inside 🙂
