These vegan ice cream sandwiches contain two layers of fudgy brownies, which sandwich a creamy vanilla ice cream. You can follow my recipe to make homemade dairy-free ice cream, or use a store bought ice cream to save time. Feel free to use any ice cream flavor you’d like.

Additionally, you can dip the sandwiches in any topping to decorate them. They are easily customizable. with endless options and variations to choose from!

Ingredients in brownie ice cream sandwiches

  • Flour: Use plain flour, which is also known as all-purpose flour. If you need to make gluten-free ice cream sandwiches, substitute it for gluten-free baking flour. I highly recommend the Bob’s Red Mill brand; the xanthan gum helps the brownie dough hold together.
  • Coconut milk: Make sure you use full-fat canned coconut milk for this recipe. Do not use light coconut milk, as it is not thick and creamy. You can find full-fat coconut milk in the Asian cuisine aisle of the grocery store.
  • Cocoa powder: I strongly suggest using natural cocoa powder rather than dutch-processed cocoa. Double check the label on your bottle. If it says “processed with alkali,” it is dutch-processed and will produce a difference texture.
  • Dairy-free butter: If you want to make them dairy-free, choose vegan butter. I recommend Earth Balance buttery sticks for the best results. If you are not vegan or dairy-free, you can use regular butter.
  • Sugar: The brownies are sweetened with a combination of brown sugar and granulated sugar, which makes them sweet and moist. The coconut ice cream is sweetened with only granulated sugar.
  • Non-dairy milk: You can use any type of non-dairy milk, but I always use almond milk.
  • Vanilla extract: Vanilla adds a sweeter flavor to both the brownies and the ice cream.
  • Baking powder: This leavening agent helps the brownies rise while baking in the oven.
  • Salt: Salt enhances the chocolate flavors.

How to make a homemade ice cream sandwich

Step 1: Prepare ice cream maker and baking pan

Ice cream maker: The day before making the ice cream sandwiches, place an ice cream maker churning bowl inside the freezer. It should chill for 24 hours.

Baking pan: When you’re ready to make the ice cream sandwiches, preheat the oven to 350 degrees F. Line a 9×13-inch pan with parchment paper and lightly grease it with non-stick spray.

Step 2: Prepare the chocolate brownies

Prepare brownies: In a large bowl, add melted dairy-free butter, brown sugar, and sugar. Whisk together until evenly combined. Then, add non-dairy milk and vanilla extract. Whisk together once more. Add flour, cocoa powder, baking powder, and salt to the bowl. Fold the dry ingredients into the wet ingredients.

Bake brownies: Spread the brownie batter across the baking pan in a smooth, even layer. Bake for 18 minutes or until the edges begin to firm. Remove from the oven and let cool completely.

Step 3: Make vegan vanilla soft serve ice cream

Prepare ice cream: In a blender, add full-fat coconut milk, sugar, vanilla extract, and salt. Blend for 2-3 minutes, until smooth and creamy. Remove the churning bowl from the freezer. Pour the blended ingredients into the ice cream maker. Churn according to the ice cream maker‘s instructions. It should produce a soft-serve consistency.

Step 4: Assemble ice cream sandwiches

Assemble ice cream sandwiches: Once the brownies have cooled, carefully flip them onto a cutting board. Slice brownies down the center, creating two halves. Spread the ice cream on top of one brownie half Then, cover it with the other brownie half to create an ice cream sandwich. Immediately cover with the cling wrap and freeze for one hour.

Slice and decorate: Remove ice cream sandwiches from the freezer and slice into bars. If desired, dip the sides in sprinkles, mini chocolate chips, or crushed nuts. Enjoy!
