- Almonds: Chopped raw almonds add a crunchy texture and provide healthy fats. Also, they are high in vitamin E, antioxidants, and may help control blood sugar.
- Almond butter: Make sure you use creamy almond butter for this recipe. I recommend using a natural variety that has a drippy consistency. That way, it will be easier to coat the oats and nuts.
- Maple syrup: This granola is sweetened naturally with real maple syrup. Alternatively, you can replace it with honey.
- Coconut oil: Coconut oil helps create a crispy texture. Refined coconut oil is flavorless and odorless, while the unrefined kind has a subtle coconut flavor. You can use either option.
- Vanilla extract: Vanilla produces a sweet, dessert-like flavor and aroma. The kitchen will smell heavenly as it bakes!

Mix the wet ingredients
First, preheat the oven to 325 degrees F. Line one large baking sheet (or two small baking sheets) with parchment paper.
In a bowl, add almond butter, maple syrup, coconut oil, and vanilla extract. Microwave for 45 seconds. Mix together until smooth.
Mix the dry ingredients
In a separate bowl, add the dry ingredients. This includes rolled oats, chopped almonds, cinnamon, and salt. Mix together.
Then, pour the wet mixture over the dry mixture. Stir together to evenly coat the oats and almonds.
Bake the maple almond butter granola
After, spread the granola across the baking sheet in an even layer. Bake the granola for 30-35 minutes, tossing once halfway through with a spatula.
Finally, remove granola from the oven and let it cool completely on the baking sheet. The granola will feel soft at first, but it will firm up and become crunchy as it cools down.

Why isn’t my granola sticking together?

If you would like to create big clusters, I recommend pressing the mixture together in a compact layer on the baking sheet. Once you toss it halfway through baking, allow several of the clumps to remain intact rather than breaking them apart.
