This ridiculously easy, 5-minute recipe is made with only 5 ingredients. Just slice a medjool date, spread creamy peanut butter and fruity jam inside, then top it with roasted peanuts and freeze-dried berries. It’s that simple! You can make as many or as few as you want. Honestly, a recipe isn’t really needed. But, if you’re the type to like specific measurements, I’ve created this post for your reference!

Ingredients for PB&J stuffed dates

  • Medjool dates: Fresh, soft medjool dates always taste the best! Also, make sure you remove the pits before stuffing them with peanut butter and jelly.
  • Peanut butter: Use your favorite type of peanut butter, whether it’s creamy or crunchy. If you want to use another type of nut butter, like almond butter, that works too.
  • Berry jam: Choose any type of berry jam that you love. I prefer grape jam to create a classic PB&J flavor, but try it with blueberry, strawberry, raspberry, and more. Alternatively, you can use jelly. However, jelly is less spreadable and has a more gelatinous texture.
  • Roasted peanuts: Roasted and salted peanuts give the stuffed dates a delicious sweet and salty flavor. Plus, they add a nice crunchy texture.
  • Freeze-dried strawberries: Freeze-dried strawberries have undergone lyophilization, which means the water has been removed. It makes the strawberries perfectly crispy, crunchy, and packed with tart flavor. Instead, you can try it with freeze-dried blueberries or fresh berries.

How to make peanut butter and jelly stuffed dates

First, slice each medjool date in half lengthwise, leaving the backside still intact. Remove the pit from each date and discard it.

Then, spread peanut butter and berry jam onto each date. Top with roasted peanuts and a sprinkle of freeze-dried strawberries.

After, gently close each date to secure the fillings. Enjoy!
