Description

Peanut butter and jelly stuffed dates are an easy and healthy snack idea! This stuffed dates recipe is made with only 5 ingredients, including medjool dates, peanut butter, berry jam, roasted peanuts, and freeze-dried strawberries. It’s a 5 minute snack that’s perfect for kids and adults. They taste just like a sweet and salty PB&J sandwich, but in a healthy dessert form. They’re great for back to school lunches and on-the-go work lunches!


Ingredients

  • 15 medjool dates
  • 1/2 cup peanut butter
  • 1/2 cup berry jam
  • 1/4 cup roasted peanuts
  • 1/4 cup freeze-dried strawberries

Instructions

  1. Slice each medjool date in half lengthwise, leaving the backside still intact. Remove the pit from each date and discard it.
  2. Spread peanut butter and berry jam onto each date. Top with roasted peanuts and a sprinkle of freeze-dried strawberries.
  3. Gently close each date to secure the fillings. Enjoy!

  • How to store: Store dates inside a tightly-sealed container. Keep in the refrigerator, and enjoy within 3 days.
