Peanut butter and jelly stuffed dates are an easy and healthy snack idea! This stuffed dates recipe is made with only 5 ingredients, including medjool dates, peanut butter, berry jam, roasted peanuts, and freeze-dried strawberries. It’s a 5 minute snack that’s perfect for kids and adults. They taste just like a sweet and salty PB&J sandwich, but in a healthy dessert form. They’re great for back to school lunches and on-the-go work lunches!

- 15 medjool dates
- 1/2 cup peanut butter
- 1/2 cup berry jam
- 1/4 cup roasted peanuts
- 1/4 cup freeze-dried strawberries
Instructions
- Slice each medjool date in half lengthwise, leaving the backside still intact. Remove the pit from each date and discard it.
- Spread peanut butter and berry jam onto each date. Top with roasted peanuts and a sprinkle of freeze-dried strawberries.
- Gently close each date to secure the fillings. Enjoy!

- How to store: Store dates inside a tightly-sealed container. Keep in the refrigerator, and enjoy within 3 days.
