Birthday rice krispie treats are an easy funfetti dessert idea! They’re even better than the original recipe. These cake batter rice krispie treats are made with cake mix, marshmallows, rainbow sprinkles, and white chocolate chips. The easy recipe is vegan, dairy-free, and gluten-free friendly. You’ll be amazed by how delicious these cereal bars are.   1. Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper. Spread the cake mix across the baking sheet. Bake for 5 minutes, then remove from the oven and let cool.
  2. Line a 9×9-inch square baking dish with parchment paper, leaving some of the paper hanging over the edges. Lightly spray with oil.
  3. In a large pot, melt the butter over medium-low heat. Add marshmallows. Stir together just until the marshmallows are melted through. It is important to slowly melt them; do not overcook the marshmallows or your rice krispies treats will become hard.
  4. Once the marshmallows are melted, immediately remove the pot from heat. Stir in the cake mix, vanilla extract, almond extract, and salt. Mix together to evenly combine.
  5. Add rice krispies cereal and 2 tbsp rainbow sprinkles to the pot. Gently fold together, evenly coating all of the cereal.
  6. Transfer the mixture to the baking dish. Using a silicone spatula, press it across the dish in an even layer.
  7. In a small bowl, add white chocolate chips. Microwave in 30-second intervals, stirring in between, until melted through. Spread on top of the rice krispie treats. Top with the remaining rainbow sprinkles.
  8. Set rice krispies aside to cool for one hour. After, slice into 12 or 16 squares. Enjoy!
