Description
This oatmeal fudge bars recipe is vegan, dairy-free, eggless, and gluten-free friendly! Rich chocolate fudge is sandwiched between two layers of baked oatmeal crumble cookie dough. It’s a copycat recipe for the original Starbucks chocolate oatmeal bars. They’re made with sweetened condensed oat milk, brown sugar, and rolled oats. They are sweet, fudgy, chewy, and buttery!

Oatmeal Crumble
- 3/4 cup dairy-free butter, softened to room temperature
- 3/4 cup brown sugar
- 1 tbsp vanilla extract
- 1 and 3/4 cups all-purpose flour
- 1 and 1/2 cups rolled oats
- 1/2 tsp baking powder
- 1/4 tsp salt
Chocolate Fudge
- 5 oz sweetened condensed oat milk*
- 1 and 1/2 cups chocolate chips
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350 degrees F. Line an 8×8-inch square pan with parchment paper, leaving some paper hanging over the edges. This will prevent the bars from sticking to the pan.
- In a large bowl, add softened butter, brown sugar, and vanilla extract. Using a handheld electric mixer or stand mixer, cream together until light and fluffy (1-2 minutes). Add flour, rolled oats, baking powder, and salt. Fold together until evenly combined.
- Using clean hands or a silicone spatula, add 2/3 of the oatmeal crumble dough to the baking dish. Press across the bottom of the dish in an even layer. Set aside.
- In a large bowl, add the chocolate chips. Pour sweetened condensed oat milk over the chocolate chips. Microwave for 60 seconds. Add vanilla extract, then whisk together to evenly combine. The hot oat milk will melt the chocolate, and it will begin to thicken.
- Pour the fudge into the baking dish. Spread it across the oatmeal cookie dough. Then, sprinkle clumps of the remaining oatmeal crumble dough on top of the fudge. Lightly press them into the fudge.
- Bake for approximately 25 minutes, or until the oatmeal crumble is light golden brown. Remove from the oven and let cool completely. Transfer to the refrigerator to chill for one hour. After, slice into 16 bars. Enjoy!
Notes
- *Sweetened condensed oat milk: You can swap this ingredient with sweetened condensed coconut milk instead.
- How to store: Store bars inside a tightly sealed container. Keep in the refrigerator and enjoy within 5-7 days. Let sit for 10 minutes before enjoying, so they soften to room temperature. If you’d like to store them longterm, keep in the freezer and enjoy within 3 months.
