What are oatmeal fudge bars made of?

  • Flour: The oatmeal crumble is made with all-purpose flour, otherwise known as plain flour. If you want a gluten-free version, swap it with a gluten-free baking flour blend.
  • Rolled oats: Be sure to use rolled oats, not quick oats or steel-cut oats. This is important to get the correct oatmeal cookie dough texture.
  • Brown sugar: Brown sugar sweetens the oatmeal crumble cookie dough.
  • Dairy-free butter: I recommend using dairy-free buttery sticks rather than spreadable butter.
  • Sweetened condensed oat milk: Nature’s Charm sweetened condensed oat milk is a dairy-free alternative to condensed milk. It contains oat milk, sugar, and coconut oil. You can swap it with sweetened condensed coconut milk, which works the same way.
  • Chocolate chips: Use dark or milk chocolate chips. Make sure they contain no dairy if you’d like the bars to be vegan.
  • Baking powder: This ingredient helps the oatmeal crumble cookie dough rise while baking, creating a soft and chewy texture.
  • Vanilla extract: We’ll use an entire tablespoon of vanilla extract for a sweet vanilla flavor.
  • Salt: Salt enhances the overall flavor, especially elevating the chocolate fudge.

How to make chocolate oatmeal fudge bars

First, preheat the oven to 350 degrees F. Line an 8×8-inch square pan with parchment paper, leaving some paper hanging over the edges. This will prevent the bars from sticking to the pan.

In a large bowl, add softened butter, brown sugar, and vanilla extract. Using a handheld electric mixer or stand mixer, cream together until light and fluffy (1-2 minutes). Add flour, rolled oats, baking powder, and salt. Fold together until evenly combined.

Using clean hands or a silicone spatula, add 2/3 of the oatmeal crumble dough to the baking dish. Press across the bottom of the dish in an even layer. Set aside.

Step 2: Create vegan chocolate fudge

In a large bowl, add the chocolate chips. Pour sweetened condensed oat milk over the chocolate chips. Microwave for 60 seconds. Add vanilla extract, then whisk together to evenly combine. The hot oat milk will melt the chocolate, and it will begin to thicken.

Pour the fudge into the baking dish. Spread it across the oatmeal cookie dough. Then, sprinkle clumps of the remaining oatmeal crumble dough on top of the fudge. Lightly press them into the fudge.

Step 3: Bake the bars

Bake for approximately 25 minutes, or until the oatmeal crumble is light golden brown. Remove from the oven and let cool completely. Transfer to the refrigerator to chill for one hour. After, slice into 16 bars. Enjoy!

How to make them gluten-free

If you’d like to make gluten-free chocolate oatmeal bars, simply use a gluten-free baking flour instead of all-purpose flour. I highly recommend using a brand that contains xanthan gum, as it will produce the best results.

How to store vegan oatmeal fudge bars

Store the bars inside a tightly sealed container. Keep in the refrigerator and enjoy within 5-7 days. Let them sit for 10 minutes before enjoying, so they soften to room temperature.

If you’d like to store them longterm, keep in the freezer and enjoy within 3 months.
