Homemade cookie dough protein bars are healthy, vegan, no-bake, gluten-free, and grain-free! This high protein snack makes a delicious post workout dessert for weight loss. It’s made in 10 minutes with cashew butter, almond flour, coconut flour, and vanilla protein powder. Ingredients

  • 1 cup cashew butter (or peanut butter)
  • 3/4 cup vanilla protein powder
  • 1/3 cup almond flour
  • 3 tbsp coconut flour
  • 1/3 cup maple syrup
  • 2 tsp vanilla extract
  • 1/4 tsp salt
  • 1/3 cup mini chocolate chips (or chopped chocolate chips)

Instructions

  1. Line a loaf pan with parchment paper, leaving some of the paper hanging over the edges. This will allow you to easily remove the bars from the pan later on.
  2. In a large bowl, add cashew butter, protein powder, almond flour, coconut flour, maple syrup, vanilla extract, and salt. Mix together until evenly combined. Add chocolate chips and mix together again.
  3. Next, transfer cookie dough to the loaf pan. Using clean hands, firmly press the dough across the bottom of the pan in an even layer. If desired, press extra chocolate chips into the top of the dough.
  4. Store inside the refrigerator for 1 hour (or freezer for 15 minutes) to set the cookie dough.
  5. Gently lift parchment paper to remove the dough from the pan. Slice into 8 protein bars. Enjoy!

Notes

  • Store these protein bars in a sealed container inside the refrigerator for up to 1 week. For longterm storage, store in the freezer for up to 3 months.
