These chocolate coconut energy balls are the most delicious snack and healthy dessert! Satisfy your sweet tooth in a nutritious manner with dates, coconut, almonds, and cacao. 


  • 1 cup shredded coconut
  • 1 cup raw almonds
  • 20 large medjool dates, pitted 
  • 1/3 cup cacao or cocoa powder
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • (Optional) 1/2 cup shredded coconut, to decorate 


  1. Add ingredients to a food processor. Process until a sticky dough forms. 
  2. Use a cookie scoop or tablespoon to scoop the dough into 18 rounds.
  3. Use clean hands to roll the dough into balls. 
  4. (Optional) roll each ball in shredded coconut to decorate. 


  • Store energy balls in an airtight container. I recommend keeping them in the refrigerator to firm and maintain freshness.
