And, honestly, they put me in a good mood every time I make them. (They’re just so cute! Look at them!) What ingredients are in cake batter energy balls?

  • Oat flour. Oat flour is the main ingredient in these birthday cake balls. It’s rich in fiber and contains thiamin, iron, calcium, and potassium. Oat flour is a wonderful gluten-free flour substitution, making it perfect for this recipe!
  • Cashew butter. Cashew butter is the rich and creamy binding ingredient for these bliss balls. You can make my homemade cashew butter or use store bought cashew butter instead.
  • Coconut sugar. Realistically, any variety of sugar can be used. I love coconut sugar but traditional cane sugar will work, as well.
  • White chocolate chips. Get your hands on some vegan white chocolate chips for the ultimate birthday cake flavor. If you don’t have any in your pantry, you can use regular vegan chocolate chips instead. The overall flavor will be different but it’ll be delicious, nonetheless.
  • Sprinkles. Rainbow sprinkles, to be exact 🙂 If you are following a vegan diet, double check the ingredients to make sure your sprinkles are free of confectioner’s glaze.
  • Vanilla extract. These energy balls really taste like vanilla cake. Why? Because we’re using a nice dash of pure vanilla extract in the dough. Don’t omit this ingredient; it’s essential for that true cake batter flavor.
  • Almond extract. Almond extract also contributes to the cake flavor. It’s an optional ingredient, but highly recommended!
  • Salt. I use pink himalayan salt, but any salt will do.

First, add oat flour, cashew butter, coconut sugar, vanilla extract, almond extract, and salt in a large bowl. Mix ingredients to form an evenly combined dough. Note: It’s easiest to use clean hands in order to mash/combine the ingredients together!

Then, add in rainbow sprinkles and white chocolate chips. Mix to evenly combine. Scoop the dough into 1-inch rounds. Use clean hands to roll the dough into balls.

Kaylie’s tips

  • You can buy oat flour or make your own at home. To create oat flour, simply add 3-5 cups rolled oats to a high-speed blender or food processor. Process until it forms into a thin, fine flour.
  • If you are following a vegan diet, make sure your white chocolate is dairy-free and your sprinkles do not contain confectioner’s glaze.
  • Different brands of cashew butter may produce varying results. I recommend using a natural cashew butter rather than a thick, no-stir kind. If your dough is looking dry, simply add 2-4 tbsp almond milk.
  • If you are using salted cashew butter, I recommend reducing the salt to 1/8 tsp.
  • Store these birthday cake balls in an airtight container or ziplock bag. I do not recommend placing them in the refrigerator; no bake desserts containing oat flour become dry under cold temperatures. Instead, keep these in your pantry to maintain their soft and chewy texture!

  • 3 tbsp coconut sugar
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract
  • 1/4 tsp salt*
  • 2 tbsp rainbow sprinkles
  • 2 tbsp white chocolate chips
  • 24 tbsp almond milk**

Instructions
